Shorten the Food Chain

The shorter the food chain, the less waste that’s created before it reaches your kitchen.  In the grocery store, look for labels with the closest geographical origin. This is often easiest with produce: A product of South America?  Even California is closer. Now that it’s summer, you have access to the shortest food chain possible: Dawson County. Check out Lexington’s Farmer’s Market Saturday mornings and Tuesday afternoons in the parking lot of Bob’s True Value, 1601 Plum Creek Parkway. Bonus: locally-grown produce is likely to be more healthy, since big international growers tend to grow produce optimized for shelf life instead of nutrition.
